Product Description:
Locust Bean Gum (CAS 9000-40-2), also known as carob gum, is a natural polysaccharide derived from the endosperm of the seeds of the carob tree (Ceratonia siliqua). It presents as a white to yellowish-white, odorless powder. Chemically, it is a galactomannan gum, consisting of a mannan backbone with galactose side groups.
Locust Bean Gum is highly valued in the food industry and other applications for its excellent thickening, stabilizing, and gelling properties. It is particularly effective at forming high-viscosity solutions in hot water and works synergistically with other hydrocolloids like xanthan gum and carrageenan to create strong, elastic gels. It is a natural and gluten-free ingredient that contributes to improved texture, mouthfeel, and stability in a wide range of products, while also preventing syneresis (water separation).
Applications:
Food Industry: Widely used as a thickener, stabilizer, and gelling agent in ice creams, dairy products (yogurts, cheeses), sauces, dressings, baked goods, fruit preparations, and pet foods. It helps prevent ice crystal formation in frozen desserts and improves texture.
Beverage Industry: Employed in some beverage formulations to improve body and stability.
Pharmaceuticals: Used as a binder, disintegrant, or controlled-release agent in tablet formulations and as a thickening agent in liquid medications.
Cosmetics & Personal Care: Found in lotions, creams, and other personal care products as a thickener, emulsifier, and stabilizer.
Industrial Applications: Used in textile printing, paper manufacturing, and as a natural emulsifier in some industrial processes.
