Locust Bean Gum (CAS 9000-40-2), also known as carob gum, is a natural polysaccharide derived from the endosperm of the seeds of the carob tree (Ceratonia siliqua). It presents as a white to yellowish-white, odorless powder. Chemically, it is a galactomannan gum, consisting of a mannan backbone with galactose side groups.

Locust Bean Gum is highly valued in the food industry and other applications for its excellent thickening, stabilizing, and gelling properties. It is particularly effective at forming high-viscosity solutions in hot water and works synergistically with other hydrocolloids like xanthan gum and carrageenan to create strong, elastic gels.
